a recipe: good for you (and tasty!) muffins

does anybody else love to bake in the fall?  i guess it's the cooler temps, the onset of long sleeves, the pumpkin spice latte on the menu at starbucks...something about it just makes me want to get in the kitchen, pull out some pans and BAKE.  i ran across a great recipe while surfing blogs (one of my favorite pastimes) a couple of weeks ago, and couldn't wait to try it out.  it turned out to be one that i know i will make for a long time to come...it's healthy, easy and delicious!  i've made three batches in the past two weeks...they are that good.  ok and i just can't stand letting a whole jug of buttermilk go to waste.  just look how cute they are:

looks tasty, right?  the best part is that they are good for you...whole wheat flour, oatmeal, fruit and NO BUTTER.  to me, that means you can slather it with a nice chunk of the yellow nectar when it's piping hot instead.  hurrah! 

here is the recipe, courtesy of kayce hughes and berries were my add -- a muffin is not a muffin without a little fruit!

OATMEAL-BERRY MUFFINS
1 cup buttermilk (i use organic valley buttermilk - they have good stuff)
1 cup rolled oats
1 egg
1/2 cup brown sugar (they are fab with brown sugar, but if you like them a tad sweeter you can use regular white sugar or raw sugar)
1 cup whole wheat flour
1/2 tsp baking soda
1 tsp salt
4 tablespoons vegetable oil
1 cup blueberries, raspberries or blackberries (for this batch, i tossed in a handful of frozen organic blueberries from costco - whatever you have on hand is fine)

Combine the buttermilk and oatmeal and let stand for 5 minutes. Add the egg and (brown or white or raw) sugar and mix well. Add the other ingredients and mix by hand. Spoon the mixture into a greased muffin tin and bake for 15-20 minutes at 400 degrees.  Makes 9-12 muffins depending on how full you fill the muffin tins.

simple and delicious to boot.  what's not to like?!  i will definitely sit down to one of these with melted butter and a cup of steaming apple cider very soon...oh yes.  fall is here!
